    成人教学——豉汁蒸排骨

     
    这是一道早就想尝试的菜,自从在致真吃了美味的豉汁蒸排骨后,就琢磨着什么时候把它给办了。今天,终于达成所愿,虽说和致真版本有点差距,但也算有滋有味了吧。 
     
    品名:豉汁蒸排骨
    主料:小排
    配料:生抽,蒸鱼豉油,料酒,糖,鸡精,蒜末,姜末,胡椒粉,生粉
     
    拆招:
    1. 准备原料;小排洗净,用料酒腌10分钟(去腥味)。
     
    2. 将小排放入沸水,焯一下捞起。
     
    3. 加生抽和些许料酒,继续腌渍20分钟,最后放入生粉抓捏均匀。
     
    4. 热油锅,放入蒜末和姜末爆香。我觉得还应放些葱末,不过家里没有,只好放弃。
     
    5. 加入蒸鱼豉油,生抽,鸡精,糖,胡椒粉,熬制一份酱汁,关火。将腌好的排骨倒入,翻拌均匀,以筷子夹放在盘子上。
     
    6. 将盘子放入蒸锅,大火蒸15分钟。
     
    开锅后香味四溢,忍不住在凹造型前偷吃一块,那个汁多肉嫩啊,这“蒸”出来的效果,果然是不同凡响耶~

    我本来也想用豆豉的,因为网上配方都说用豆豉,但是我家没有,所以只好找了豉油代替。现在想想,可能还是豉油更鲜更入味吧。

    总算知道为什么自己做不好了,原来用的是豉油,而不是豆豉。
