    成人教学——做个月饼过中秋


    问同事抄了个肉月饼方子,上周在家实践,基本成功;只不过内部馅料有点偏干,留点小遗憾,下次改进。今年中秋,就吃自己做的肉月饼啦!
     
    品名;肉月饼(16个)
    配料1(水油皮):普通面粉150克,糖20克,熟猪油60克,开水60克
    配料2(油心):普通面粉100克,熟猪油50克
    馅料:肉糜,盐,生抽,老抽,白糖,料酒,麻油,姜末,香葱,生粉,胡椒粉,蛋清(2个鸡蛋的分量),水
    烘焙:烤箱中层,上下火,180度,25分钟。
     
    拆招:
    1.先给所有原料来张合影。得说说猪油,这可是我亲自到菜场亲自买肥肉亲自剁成一小块一小块再亲自熬出来的猪油啊,非常不容易。咳~,还好不是我亲自提供的肥肉。。。

    2.准备馅料;将蛋黄蛋清分离。蛋清用来拌入肉糜,而蛋黄留着备用,一会儿刷在月饼表面,烘焙后颜色更好。
     
    3.调制馅料,将肉馅的所有原料混合,口味随意,反正按自己喜欢的来。有2点需要注意:(1) 搅拌,一定要按一个方向或顺时针或逆时针搅拌,不可改变方向,否则肉糜没有黏性;(2) 加水,水可以让馅料口感更湿润。我就是因为水加的不够,才让成品有点偏干。馅料拌好后,放冰箱冷藏备用。

    4.准备水油皮:将水油皮材料混合,揉捏30-40分钟,静置5分钟,放冰箱冷藏20分钟;准备油心:将油心材料混合,揉捏10分钟后,也放冰箱冷藏20分钟。以下是做好的3种主料,上面是肉馅,下面左边是水油皮,右边是油心。

    5.将油心包入水油皮,封口朝上做成面团;将面团按平,擀成薄皮。(貌相丑了点,多包涵!)

    6.将薄皮分成4份,将其中一份再切成4个小卷。(一共16个小卷,正好烤一盘)

    7.将小卷按扁,擀成面皮。

    8. 包入馅料,收口,封口朝下放入烤盘。

    9.刷一点蛋液,放入烤箱。180度,上下火,25分钟。
     
    10. 出炉。不好意思,表面焦了,因为刚开始只开了上火,忘了开下火。。。。
     
    挑一个不焦的摆摆pose算了,可惜挑的这个还有点汁水外流,唉~
     
    掰开,注意酥皮分层,是不是很专业啊?哈哈!不枉Jeff揉了足足40分钟也。。。。。
